Baked Eggs in Sauce
2 Cups Tomato Sauce (We recommend using Leda’s Meat Sauce but for an alternative and vegetarian option try Gina’s Marinara)
Salt and freshly ground pepper
2 tablespoons freshly grated Parmigiano-Reggiano cheese
Preheat the oven to 400°. In a cast iron pan, or medium ovenproof baking dish, place tomato sauce.
Crack eggs and separate evenly on top of sauce. Season with salt and pepper, then sprinkle with cheese. Bake the eggs for 15 minutes, until the whites are set. Serve hot. Boun Appetito!
