Hello Commellini Friends & Family,

I hope this letter finds everyone well! Like so many of you, we have spent the last several days and weeks learning about the coronavirus (COVID-19) and how it is impacting our world. For Commellini Estate, that means understanding how it affects our employees, customers and communities, and then making the necessary adjustments to our work and operations. We have one simple objective that guides us: keeping you, our guests, and our team safe.  With safety in mind, we have immediately enacted several new policies, beyond current CDC and Washington Department of Health regulations. I have listed a few of these policies below to rest assure we are being as vigilant as possible:

  1. Increased Cleaning Guidelines. Working with food and maintaining our excellent Food Inspection & Facility rating, cleanliness has always been top of mind for Commellini Estate. However, we have increased the frequency of sanitation with special regards to heavily trafficked areas including door handles, faucets, restrooms, etc.

  2. Assigning a “Cleanliness Team” during events. For each event we are increasing staff to have a “Cleanliness Team.” These individuals will go around during & throughout the event to clean door handles, make sure all areas are disinfected, while also being discrete to minimize attention during the event.

  3. Educating Employees.We are taking the time with all Commellini Team members to ensure all employees are well-versed in best practices in preventing the spread of this virus. This includes emphasis on hand washing, signs and symptoms to be aware of, and the precautions that can be taken to minimize the risk.

  4. Changes in Service. We have several new policies related to our service, one being that all buffets will be one-sided and all items will be served by Commellini Estate team members (i.e. no self-service for guests to prevent multiple touch-contact on tongs/spoons/serving utensils, etc).
